You’re never going to believe this, but it’s true. I’ve actually deviated from my usual Lean Cuisine frozen lunch variety and had myself a South Beach Diet entree for lunch today. And now I remember exactly why I avoid performing such atrocities. It’s like this…
CHICKEN FILLER(?)
I’m not going into details about how the chicken in this particular Chicken Bosilico with Rotini entree tasted like some sort of boogery gelatinoid substance, completely devoid of actual CHICKEN MEAT. Nope. Not going there today. Instead I will warn you against purchasing and taking any kind of bites out of that toxic gunk boxed up all innocent-like in the frozen food aisle. That stuff is EVIL, I tell you. Even after I’ve brushed my teeth with Arm & Hammer peroxide toothpaste, I still can’t seem to get the memory of that icky substance out of my head.

It’s about time I posted a ‘What I Had for Lunch’ blog, don’t you think? So here goes.
This morning I helped out in the media center at the Catholic Kids’ school, keeping my growling stomach under control by drinking bottled water and chewing gum. These tactics worked for a few hours, but by the time I returned back home to re-charge and get ready for more errand running, my stomach was screaming:
FEED ME ALREADY, WOMAN! CAN’T YOU HEAR ME GROWLING DOWN HERE?! LIKE I’M DOING THIS FOR MY HEALTH?! SHEESH.
So I’m pulling out the proverbial ‘big guns’ and having myself a big bowl of popcorn & Quaker Snack Mix alongside a Lean Cuisine meat & cheese lasagna.
Rumbling all gone. How heavenly.

We interrupt this blog for an important announcement:
ITCM resigned from her position as the IT Director at the nonprofit organization within which she has been employed for almost 4 years. Official notice has been given.
But don’t worry. The employment change is for the better.
Now why is that? Because she isn’t going far from the Sisters. In fact, her status is changing over to IT Consultant who will be on call to answer to the Sisters’ personal computer needs.
For this news I cannot express how blessed and excited I feel at this very moment. Now, excuse me while I do my Happy Dance/Toyota Jump/Cabbage Patch combination in tribute to this new development. Get your Lean Cuisine and join me in celebration over lunch.

Because I’m stinking up the place with my roasted chicken with lemon pepper fettuccini and trying to think of a blog topic, that’s why. Sometimes the mind draws a blank, especially after a weekend of endless laundry and toilet bowl scrubbing. All creativity exited out that window over there.
